What is Fleur de Sel?

Following a centuries-old tradition, the salt flowers are carefully skimmed off to preserve their unique structure and mineral richness. SAL de IBIZA's Fleur de Sel comes from the salt flats of Las Salinas, a UNESCO World Heritage Site where high-quality sea salt has been produced for over 2,700 years. The salt flats of Ibiza were established by the Phoenicians, who took advantage of the particularly favorable geological conditions for salt production. These original salt production areas, which form the basis of all Mediterranean salt production, consist of salt flats of varying sizes, carefully demarcated by earthen embankments. They remain the source of this unique salt. Through the evaporation of this exceptionally clear and pure seawater in the Posidonia seagrass meadows between the Pityuses (Ibiza and Formentera), the fine salt crystals form. Today, the salt flats of Ibiza have been a strictly protected nature reserve since 1999. For us, it is the "Crystal of Life"!
