Grilled Watermelon with Arugula Salad and Feta Cheese

Watermelon is the perfect food to cool down on a hot summer day! Try it a little different and grill it!
Grilling it slightly outside until grill marks appear while leaving the centre cool and raw is the key to grilling the fruit. The sugar in the watermelon caramelizes, making a new taste to the fruit. The combination of the arugula salad with it´s slightly bitter taste and the salty cheese is just perfect! The pinch of SAL de IBIZA Granito Spicy Cajun gives it an extra spicy kick.

Grilled Watermelon Arugula with Feta Cheese

Ingredients
  • 8 pcs watermelon
  • 200g feta cheese
  • 125g arugula
  • 3 tbs olive oil extra virgin
  • 1 pc lemon
  • 1/2 cup sherry vinegar
  • 1 pinch SAL de IBIZA Granito Spicy Cajun
  • 1/2 pc red onion
  • 1 tsp honey or agave juice
  • 1 pinch black pepper
Instructions
  1. Prepare a grill or grill pan to a very high heat.
  2. Grill the watermelon slices quickly, until grill marks develop.
  3. Place arugula on your plate and add thin slices of red onion.
  4. Mix olive oil with sherry vinegar and lemon juice and add some honey or agave juice to sweeten.
  5. Drizzle dressing on top of the arugula.
  6. Place watermelon slices and feta on top.
  7. Season with SAL de IBIZA Granito Spicy Cajun and pepper.
