Steamed Artichoke with lemon-mustard vinaigrette

Steamed artichoke with lemon-mustard vinaigrette

  • 2 pcs artichokes
  • 1/2 pc lemon
  • 2 tsp SAL de IBIZA Granito Hibiscus
  • 2 tbs white sherry vinegar
  • 2 tbs mustard
  • 2 tbs olive oil OR replace olive oil with
  • 2 tsp mayonnaise (also vegan) if you like it more creamy
  • 1/2 bunch chives
  • 2 tsp lemon juice
  • 1/2 bunch parsley
  • 1 pinch pepper
  1. Rinse artichoke under cold water and pull off any lower petals that are discolored
  2. Cut stems close to base and cut off top quarter and tips of petals with kitchen scissors
  3. Plunge them upside down into boiling water (about 5 cm) and turn down the heat to low. Add juice of 1/ 2 of a small lemon to preserve color to avoid discoloration
  4. Cover the pot and simmer for 25-40 minute or until you can easily poke through the artichokes with a knife from top to bottom.
  5. While artichokes are simmering, prepare dip: Place all ingredients in a small bowl and whisk until incorporated. Add as much fresh chopped parsley and chives as you like for color and flavour
