…we love it! These zoodles are a welcome change from our beloved Italian pasta! Low in carbs, low in calories, and high in vitamin A, C, fibres and antioxidants. Gluten-free and easx to make.

Ingredientes
  • 2 pcs chicken breast (we use BIO/organic quality)
  • 3 pcs zucchini, medium size
  • 8-10 pcs cherry tomatoes, quartered
  • 2 tbsp fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tsp parmesan cheese, grated
  • 3 - 4 tbsp olive oil extra virgin
  • 1 pc lemon, juiced
  • 2-3 pinches SAL de IBIZA Fleur de Sel ISLA BLANCA
  • 1 pc red pepper cut into slices
  • 1 pinch ground black pepper
  • 1 pinch fine sea salt, e.g. SAL de IBIZA Fina
Instrucciones
  1. Create zucchini spaghetti using a spiralizer
  2. Heat one tablespoon of olive oil in a large pan to medium-high heat. Add zucchini noodles and cook for about 2 to 3 minutes, until zucchini noodles are tender but still a bit chrunchy. Let the zoodles rest for about 3 minutes so that they can release all of the moisture. Transfer noodles to a colander.
  3. In a second pan heat one tablespoon of olive oil. Add olive oil and minced garlic. Cook garlic for 30 seconds to 1 minute or until fragrant.
  4. Add chicken, red pepper and tomatoes. Cook for about 8 minutes, until chicken is golden and cooked through and tomatoes start to break down and release some juice.
  5. In the meantime mix lemon juice, the remaining tablespoon of olive oil, fine salt, parseley and pepper in a small bowl.
  6. Add the lemon juice mixture and the tomatoes from the chicken pan to the pan of zoodles. Stir until everything is combined and heated through.
  7. Sprinkle zoodles with Parmesan cheese and sprinkle SAL de IBIZA Fleur de Sel ISLA BLANCA onto the chicken breast
  8. Serve together on a plate and enjoy!
