Poached Eggs on Roasted Green Asparagus

Fast and easy (yes, indeed!) to do and utterly delicious! Roasted green asparagus topped with poached eggs suits prefectly for a tasty light lunch. Our ISLA BLANCA Special Edition makes it a match made in food heaven!

Poached Eggs on Roasted Green Asparagus

  • 500 g green asparagus (prefarably organic quality)
  • 4 pcs eggs
  • 2-3 tbsp vinagre
  • 5 tbsp olive oil
  • 2 pinches SAL de IBIZA Isla Blanca
Anleitungen
  1. Trim the ends of the asparagus
  2. Heat olive oil in a skillet and roast the asparagus for about 10-12 min. (you could also do it oven (25min)). Toss them gently around while roasting
  3. Add a couple tablespoons of vinegar to your water. Don´t worry, it doesn’t affect the flavor!
  4. Crack your eggs (each alone) into a small bowl before adding it into your water. This allows you to gently sink the egg into the water rather than plop it in.
  5. Stir your water before adding the eggs to create a little “whirl pool.”
  6. Sink one egg after another gently into simmering water. Wait a little time until you sink the next egg so that the one you put in before already takes some shape and thus allows leaving plenty of space between them!
  7. Cover it, turn off the heat, and let them sit for five minutes
  8. Don´t forget to turn around the asparagus in between!
  9. Remove eggs carefully with a slotted spoon and drain them well on paper towel.
  10. Set the poached eggs on the asparagus. Sprinkle with SAL de IBIZA Isla Blanca and ENJOY!
